Beer Battered Shoestring Carrots

The only people I know who consider carrots a snack food are practically vegetarians. Sure, they are crunchy and pair perfectly with hummus. But really? I’d much rather be noshing on pretzels or chips. Carrots are not my first thought when deciding on a snack. You also probably never thought of them as pub (sorry, there’s my English roots showing) food. But I’m telling you, carrots made with a perfectly seasoned beer batter are both deserving of munching and would totally fit in on your favorite bar counter while you down a few brewskies.

No Hoo-Ha Carrot Cake

At various times in my life I have turned up my nose in disgust at carrot cakes. Seriously. Carrots? Those are a vegetable and I love them – they do not belong in cake. I compartmentalize my food. If I’m being “bad” and eating cake, I don’t want to mix up that emotion with the “good” of eating a vegetable. I’m not adept at sorting out that many contrasting feelings. However, I realized this week that I used to feel the same way about zucchini cakes – until I discovered that my mother’s chocolate zucchini cake (I’ll have to make that soon and post the recipe) is one of the most delicious things on the planet. Apple Carrot Bran Muffins

We are having an aerobics session at tomorrow’s MOPS. And, my table is on tap for breakfast foods. I figured I should bring something that’s not laden with sugar, butter and cheese. Drat. These muffins totally fit the bill. They are chock full of fruits and veggies – and almost no fat! They are moist, delicious and practically guilt free! Seriously. These are absolutely fantastic. Yippee! Bring on the workout! I’m ready. I hope tomorrow’s  exercise session is something like the included video. That would make me so happy.
