Cranberry Jalapeño Bruschetta

This week, I’m sharing some of my favorite Christmas Party foods. Everyone needs a few good, go to items to bring when you’re invited out at the holidays! We’re starting off with a recipe I stole from a friend after she brought it to a party last Christmas. The beautiful red color of the cranberries is perfect for this time of year! With sweet and tangy flavor from the cranberries and heat from jalapeno, they’re bright and vibrant in your mouth! You’ll be snagging these little babies until the plate is empty!

Cranberry Jalapeno Bruschetta

Extra recipe for a genius use of the drained juice since I hate wasting things with so much flavor! After you’ve let the berries soak in sugar and drain the juice, you are essentially left with cranberry simple syrup with a little pop of jalapeno. I whipped up an amazing martini for my husband by combining 3 parts vodka to one part cranberry syrup (drained juice). Shake over ice and pour into a martini glass. I wish I had a little jalapeno for a garnish with the cranberry…alas, had to use a lime. Oh well. Delish!

Cranberry Jalapeno Bruschetta
from What’s Cooking With Ruthie

1 (12oz) bag fresh cranberries, finely chopped
1 C sugar
2 green onions, thinly sliced
2 jalapenos, seeded and diced
3 Tbsp fresh cilantro, finely sliced
1 (8oz) package cream cheese
1 baguette, sliced ½ inch thick on a diagonal
olive oil
additional cilantro leaf and quartered cranberry for garnish

Instructions
  1. Preheat oven 400 degrees.
  2. Place baguette slices on baking sheet, drizzle with olive oil.
  3. Bake 5-6 minutes until golden brown, let cool.
  4. In mixing bowl combine cranberries, sugar, green onions, and jalapenos; mix until combined.
  5. Let marinate for 5-10 minutes.
  6. Drain juice, add cilantro, mix well.
  7. When ready to serve spread 1 Tbsp cream cheese on each baguette, a dollop of cranberry mixture, garnish with additional cilantro leaf and cranberry if desired. Enjoy!

Lucky Leprechaun St. Patrick’s Day Drink

If you are looking for something to put a little jig in your step and are not the Irish Whiskey or Guinness drinking type, may I suggest this delicious and delightfully festive St. Patrick’s Day drink? It’s bright emerald color is perfect for all your Irish gatherings. It packs a wallop of gladness and is guaranteed to make you feel as though you’d found the end of the rainbow. I call it the Lucky Leprechaun.

Lucky Leprechaun - Bakerlady

Gorgeous right? Here’s how to make it. Combine equal parts Captain Morgan’s Spiced Rum, Malibu Coconut Rum, Midori Melon Liquor and Blue Curacao Liquor with a splash of pineapple juice in a cocktail shaker over ice. Shake to combine, then serve in an old-fashioned glass. Or, if you’d prefer, a highball glass filled with ice and garnished with a little wedge of pineapple/cherry and an umbrella. But on St. Patrick’s Day, you are going to probably be opting for the less high maintenance version. Just sayin. You can also make this a shot. Same ingredients. Pour into shot glasses and throw one back shouting “Kiss me I’m Irish!”. Cheers!

Lucky Leprechaun - Bakerlady

Equal Parts:
Blue Curacao liqueur
Midori® melon liqueur
Malibu® coconut rum
Captain Morgan® spiced rum
splash (or two) pineapple juice

Add all ingredients to a cocktail shaker half-filled with ice cubes. Shake and strain into a glass. Serve.

*Side note: With a splash of sweet n’ sour mix, in addition to the pineapple juice, this drink is known as “Liquid Marijuana”.

Witch’s Elixir (The Best Party Punch EVER)

No Halloween party would be complete without a powerful punch. This Witch’s Elixir is deadly good. You’ll need a GIANT cauldron or will need to scale down the recipe to fit it in a normal punch bowl. I recommend the cauldron, it really lends to the atmosphere of a good Halloween party. At every shindig I’ve ever made it for, the entire batch of this punch has disappeared.

Witch’s Elixir
adapted from Festivals

4 (48-oz) cans Pineapple Juice
1 (96-oz) bottle Orange Juice
3 (2-liter) bottles Lemon-lime Soda
1 (1.75-liter) bottle Vodka
1 (1.75-liter) bottle Rum
1 (1.75-liter) bottle Coconut Rum

Mix all the ingredients well

Snow Bear

It has already been a long hot summer here in the Pacific Northwest. And it isn’t even August yet. June and July have been far too sticky and sweltering for this mild-weathered girl. Thankfully, I recently returned from an Alaskan cruise. Blissful 50 degree breezes blowing across the deck of our ship were the perfect relief from sweaty summer days. We saw gorgeous glaciers bigger than you can imagine. Giant chunks of ethereal blue ice creating tidal waves of force as they fell off. The little dots in the foreground of this picture are harbor seals.

Chilly Snow Bear - Bakerlady

One of the highlights of our cruise were the drink cards our travel agent Dana (Dana@aplustravel.com) provided for us. She was incredibly helpful from booking to completion of our cruise and I highly recommend her! I had the opportunity to try some drinks I’d never even heard of before and really enjoyed one called a Snow Bear. It was cool and light – the perfect thing to put a chill in the summer air. It tastes a little like an Mounds candy bar. Full of refreshing coconut, milk and rich chocolate.

It’s the last day of school in my area. Time for relaxing by the pool during the day, languid summer evenings, beach parties, bar-b-ques and camping trips. Dirty Vodka Martini

Any day is a good day for a dirty vodka martini. June 15th is an exceptionally good day. It’s the day I remember a man named Jeffrey. Most called him JD. He was my husband’s dad. I called him Jeff. He just referred to me as “the girl”. He was funny and crazy and I miss him all the time. My father-in-law used to say “Drinking a martini is just an excuse to eat olives.” He was right.

Better Than Childhood Fruit Punch

Do you remember Hi C fruit punch? Getting bright red smile lines from the corners of your lips up to your cheeks? Do they even sell that stuff anymore? Probably not with all the sweeteners and dyes I’m sure it was made from. Apparently such things are horrific and we were lucky to survive childhood consuming all those body damaging products. Reward yourself for making it to adulthood unscathed with a drink sure to stir up all kinds of nostalgic taste memories, and provide you with a little kick! Fruit punch taste with the addition of alcohol. Oh yeah!

Blue Ballz

The title of this drink truly irritates me. I hate it when normal words are spelled incorrectly on purpose to make them “interesting”. For me, it only serves to make a word totally annoying. As if the English language isn’t odd enough, I have to explain to my kids why some marketing “genius” decided to mess things all up even more. Dumb. See? Right there. A silent “b” at the end of a word. What’s that all about? Who decided to keep that as part of English? Whoever it was, congrats. Because that alone is plenty to make our language full of intrigue. Wait, and the silent “w”. Those are just wrong.

Kihei Killer

Not only is my friend Bethany an excellent cook, she also enjoys mixing cocktails. It’s one of her many endearing qualities. She threw together this little drink while we were visiting and it was delicious! We decided to name it the Kihei Killer. Enjoy!

Kihei Killer
from Bethany’s Bar

2 ounces pina colada mix
2 ounces orange juice
2 ounces vodka
4 ounces Malibu Black
1 ounce pineapple juice
dash of grenadine

Mix well over ice and strain into glass.

Bikini Martini

I stumbled upon this drink and thought it was only fitting to share as I will soon be basking on the warm sand of a Hawaiian beach. I am not genetically blessed, or maybe just didn’t appropriately apply coconut body lotion while pregnant and as such, I will not be in a bikini – but I figured I could test drive this drink anyway. It’s fruity and fun. Delightfully sweet, but not too much. It’s like summer in a glass. Perfect for sipping while soaking up some rays, or bringing a little sunshine to your dark, depressing winter day.
