Have you ever dreamed of being one of those people who hands out homemade candy at Christmas, but secretly loathe those with that much time on their hands during the holidays? Well my friend, this recipe is for you. I’ve been making cookies, candies, treats and tasty things at Christmas time for two decades (sheesh I’m old), and never have I found a goodie that takes less time and effort than this Crockpot Christmas Crack.

This stuff is the easiest Christmas candy ever. EVER. You literally throw all the ingredients in a crockpot, wait a bit, stir, then drop blobs out onto wax paper to cool. Boom. Done. For the super fancy, you can drop the candy blobs into mini cupcake liners. Ooooooh, so very Martha, Betty, Paula, Ina of you!

Bonus. It tastes incredible. Peanuty chocolatey goodness. You’d swear it came from an upscale sweet shop. Double bonus. It makes a TON. You’ll be able to gift a bag to your neighbors, your co-workers, church small group, kids sports team, cashiers at the corner store, postman, hairdresser, in-laws, out-laws, the butcher, baker and the candlestick maker. Plus still have enough to leave some for Santa, and make yourself sick off what’s left.

Print Recipe for Crockpot Christmas Crack

Crockpot Christmas Crack
adapted from Just a Pinch

1 – 16 oz jar(s)unsalted peanuts

1 – 16 oz. jar(s)salted peanuts
1 – 12 oz bag(s)semi-sweet chocolate chips
1 – 12 oz bag(s)milk chocolate chips
2 – 10 oz bag(s)peanut butter chips
1 lb pkg white almond bark or vanilla candy coating (I used candy coating)
Layer all ingredients in a large crockpot (starting with peanuts). Turn the pot on low, cover with lid, and leave sitting for 30 minutes. Then, remove lid and stir to combine. Replace lid and leave sitting for another 15-30 minutes. Stir again and then spoon mixture on to wax paper, or if you are feeling SUPER fancy, drop into mini-cupcake liners. Allow to harden for at least 1 hour. Enjoy!

Snow Bear

It has already been a long hot summer here in the Pacific Northwest. And it isn’t even August yet. June and July have been far too sticky and sweltering for this mild-weathered girl. Thankfully, I recently returned from an Alaskan cruise. Blissful 50 degree breezes blowing across the deck of our ship were the perfect relief from sweaty summer days. We saw gorgeous glaciers bigger than you can imagine. Giant chunks of ethereal blue ice creating tidal waves of force as they fell off. The little dots in the foreground of this picture are harbor seals.

One of the highlights of our cruise were the drink cards our travel agent Dana (Dana@aplustravel.com) provided for us. She was incredibly helpful from booking to completion of our cruise and I highly recommend her! I had the opportunity to try some drinks I’d never even heard of before and really enjoyed one called a Snow Bear. It was cool and light – the perfect thing to put a chill in the summer air. It tastes a little like an Mounds candy bar. Full of refreshing coconut, milk and rich chocolate.

Genius Golden Grahams Smore Bars

A couple housekeeping items before we get to the deliciousness here. Notice the new watermark gracing the corners of my photos? Isn’t it lovely? Hopefully it will help keep people (who are not me) from passing off my stuff as theirs. Sometimes I’m so disappointed in humanity. Also, just above the actual recipe details, you’ll find a link to print a pdf of my deliciousness. Hooray! No more highlighting text to print it! Now, on to something that makes me very happy. Camping food.

(happy sigh) I love camping food. It’s the best. I’ve shared my smore bars before, with a graham cracker crust, chocolate middle and mallow topper. They’re quite delicious. But, they aren’t very camping friendly. It’s hard to broil the top of a layered dessert when hanging out around an open campfire. Leave it to Betty Crocker to have a solution. Crunchy graham cracker cereal tossed with buttery marshmallow goodness, with chocolate chips and mini-marshmallows sprinkled throughout. Like a delicious graham cracker rice crispy treat. With all the flavors of smores mixed in. Genius! These gorgeous bars take just minutes to put together and require no baking!

Under Construction Cake

Do you remember counting down the days til your birthday? Yeah, it’s been a while since I’ve done that too. But every year I try to put myself back in that childhood mode when the countdown started the day after your last birthday. Turned 4 last week? You are TOTALLY almost 5. In my opinion, a kid’s birthday should be the most amazing day of their entire year. I get a little crazy at birthday time. My son’s big day just happens to be smack in between Thanksgiving and Christmas. A most inconvenient time to add a big birthday bash to our calendars. However, I recognize that this is not his fault, and so every year I attempt to make his day truly special in the midst of all the holiday bustle.

Dove Dark Chocolate Chocolate Cookies

“I don’t understand why so many ‘so called’ chocolate lovers complain about the calories in chocolate, when all true chocoholics know that it is a vegetable. It comes from the cocoa bean, beans are veggies, ’nuff said.” I have no idea who said this. I found it online at one of those portals for quotes about chocolate. But it says everything I feel about chocolate. When I’m eating it. I just don’t care about calories. I just don’t. I’m lost in the rich pure deliciousness of it. These cookies are a chocoholic’s dream. Fudgey cookies topped with a morsel of pure Dove dark chocolate. I used hearts since Valentine’s Day is coming up. Nothin’ goes better with a made up holiday about love than chocolate.

Oreo Mint Ice Cream Pie

As I wandered the aisles of the grocery store the other day I was struck with the realization that I find great pleasure in having enough random stuff in my cart that the cashier wonders if I may have multiple personalities. Joy is found in the little things in life people. Confusing salespeople is one of the simple ways I stay happy. Thrilling as it was, this epiphany made me feel very old. It also reminded me of the movie Hook and the line “I’ve just had an apostrophe.”. Speaking of suddenly feeling middle-aged, babies born the year Hook came out are now old enough to purchase alcohol legally. Holy crap.

Lazy Heath Bars

I’ve been cleaning my house like a crazy person for two days. If you know me, you know this is NOT normal behavior. Usually I’m perfectly content for my house not to resemble a museum or some kind of scientific lab. I prefer to spend my time on the floor doing puzzles or coloring rather than scrubbing. Things are clean enough. Or, as my father-in-law used to say “good enough for government work”. He was allowed to say things like that. Jeff worked for the IRS for 20+ years. When houseguests are coming however, I become a short freckled version of Adrian Monk. Ok. Not quite that obsessive. Close though.

No-Bake Peanut Butter Pretzel Chocolate Chip Granola Bars

I have been looking for a no-fail, easy homemade granola bar recipe for a few weeks now. Fall is coming and my sweet Madison is starting Kindergarten. How did that happen so fast? I blinked and suddenly she was 5. Crazy. I cannot wait for after school snack time. I remember that being the best thing ever. Come home from school to a glass of cold milk and some kind of treat? Oh yeah. This recipe is going to be made every single week I’m sure. It takes 5 minutes, you don’t have to bake anything and they are incredibly delicious.
