Oreo Mint Ice Cream Pie

As I wandered the aisles of the grocery store the other day I was struck with the realization that I find great pleasure in having enough random stuff in my cart that the cashier wonders if I may have multiple personalities. Joy is found in the little things in life people. Confusing salespeople is one of the simple ways I stay happy. Thrilling as it was, this epiphany made me feel very old. It also reminded me of the movie Hook and the line “I’ve just had an apostrophe.”. Speaking of suddenly feeling middle-aged, babies born the year Hook came out are now old enough to purchase alcohol legally. Holy crap.

Included in my cart on this recent excursion was a sink p-trap kit, oranges, Oreos, four boxes of crayons, bacon bits, a new wall mirror, Pop Chips and a vacuum bag. Yes, there’s a magical place you can get all that in one stop. It’s called Fred Meyer and it’s the greatest thing about the Pacific Northwest. I kid, I kid. The weather tops that list.
I brought the Oreos home and added them to a few ingredients I already had to make this quick and easy but very impressive looking dessert.

Here’s how fast it comes together. I don’t even need to use words.

Yeah. Minty chocolatey goodness on an Oreo crust. Boom. I know. If I have multiple personalities, you’re in love with the one that brought you this. And no, you aren’t crazy. There are no peanuts in that photo of the ingredients. I had that brilliant idea about halfway thru making this.

Jeez, just look at those layers. (insert sing-song voice here) Ahhhh-maaaaaazing!! Oh, a little tip. Use an offset spatula or butter knife to spread out the hot fudge. Run your knife under hot hot water and then dry it quickly and use it to spread. It cuts thru the fudge topping way better when the metal is warm.

Simply glorious! Yum yum yum yum yum!

Oreo Mint Ice Cream Pie
a Bakerlady original
24 Oreo cookies, crushed fine
1/4 cup butter, melted
1/2 gallon mint chocolate chip (or mint & cookies) ice cream
1 jar hot fudge topping
1/2 c. peanuts (optional)
Mix mashed cookies with butter and press into a 9 inch pie plate. Place pie plate in the freezer and remove the ice cream. Allow crust to harden and ice cream to soften for about 10 minutes. Remove crust from freezer and spread ice cream on top of Oreo crust. Sprinkle peanuts (if desired) over the ice cream and press lightly. Add fudge topping, spreading over peanuts & ice cream. Place in freezer and chill at least 2 hours. Remove from freezer 10 minutes before serving. Keeps up to 10 days.
