Sopapilla Cheesecake

Who would have thought that cinnamon sugar, puffy warm bread and cream cheese filling would blend together in a totally divine delicious way? I always think of cheesecake with fruit or chocolates, never did I think of combining it with flaky golden pastry and sweet cinnamon sugar. Mind. Blown. Mouth. Happy.

Churros

What happens when a girl who loves Disneyland has leftover cinnamon sugar? She makes churros. I have been longing for Disneyland churros for about two weeks now. They are my absolute favorite thing to eat there. Well, the Pomme Frites from Cafe Orleans are also amazing. And I do love a frosty Dole Whip. But I could eat 6 or 7 churros a day when at The Happiest Place On Earth. No. I am not kidding. I love them. From the bottom of my heart. I made these to use up the extra cinnamon sugar I had left over from my doughnut making (that post coming soon). And, to take the edge off my Disney craving. They may have made it worse – hard to tell. These pillowy cinnamon sugar delights are sure to be a hit and are easier than I expected to make.

Sorta Sopapilla

Sopapilla [soh-pi-PEE-yuh] is a traditional Mexican dessert. It’s a crisp, puffy, deep-fried pastry often served with honey or syrup. For our family fiesta tonight, I’m making our totally non-authentic version of this amazing treat. My mom has been making these for years and we all absolutely love them. Instead of using an actual sweet dough, we use basic flour tortillas cut into wedges. They take a dunk in hot oil, get a sprinkle of cinnamon sugar and then are served up with strawberry jam, honey and fresh whipped cream. (insert satisfied sigh) Sooooooooo delicious. [Read more…]
