The Best Corned Beef Dinner Ever

Saint Patrick’s Day is coming. Time for too-ra-loo-ra-loo-ra-ing about Molly Malone, Danny Boy and my Wild Irish Rose. Time for dancing a jig while not spilling a drop. Time for decking out in shades of forest, emerald, mint and moss. For celebrating my freckles and green eyes while lamenting my lack of red-headedness. And the most glorious of all, time for every grocery store from sea-to-shining sea to suddenly stock up on corned beef. This Saint Patrick’s Day, be the lord of the manor with this absolutely perfect, not a hint of dry meat anywhere, corned beef dinner. Made in a crock pot, this scrumptious classic will fill your home with rich mouth-watering aromas, and keep you laughing, singing and toasting with your friends and family instead of slaving over a hot stove.

Lucky Leprechaun St. Patrick’s Day Drink

If you are looking for something to put a little jig in your step and are not the Irish Whiskey or Guinness drinking type, may I suggest this delicious and delightfully festive St. Patrick’s Day drink? It’s bright emerald color is perfect for all your Irish gatherings. It packs a wallop of gladness and is guaranteed to make you feel as though you’d found the end of the rainbow. I call it the Lucky Leprechaun.

Lucky Leprechaun - Bakerlady

Gorgeous right? Here’s how to make it. Combine equal parts Captain Morgan’s Spiced Rum, Malibu Coconut Rum, Midori Melon Liquor and Blue Curacao Liquor with a splash of pineapple juice in a cocktail shaker over ice. Shake to combine, then serve in an old-fashioned glass. Or, if you’d prefer, a highball glass filled with ice and garnished with a little wedge of pineapple/cherry and an umbrella. But on St. Patrick’s Day, you are going to probably be opting for the less high maintenance version. Just sayin. You can also make this a shot. Same ingredients. Pour into shot glasses and throw one back shouting “Kiss me I’m Irish!”. Cheers!

Lucky Leprechaun - Bakerlady

Equal Parts:
Blue Curacao liqueur
Midori® melon liqueur
Malibu® coconut rum
Captain Morgan® spiced rum
splash (or two) pineapple juice

Add all ingredients to a cocktail shaker half-filled with ice cubes. Shake and strain into a glass. Serve.

*Side note: With a splash of sweet n’ sour mix, in addition to the pineapple juice, this drink is known as “Liquid Marijuana”.

Bread Pudding with Bailey’s Custard

Warning! This is quite possibly the best, most decadent, delicious and amazing food item I’ve ever created. It is over-the-top rich. I have convinced myself that if I only eat it once a year or so, I don’t have to feel guilty about it. Sort of. I’m already dreaming of when I can make this again. It was heavenly. Here’s the thing about bread pudding. It’s bread. Lots of bread. Soaking with cream and sugar. And butter. Then served with a cream sauce. And, in this case – that cream sauce is drunken with Bailey’s Irish Cream Liqour. Absolutely NOT a diet food. But worth every single incredible calorie. As fancy as bread pudding seems, it’s really easy to throw together. Takes some time, but most of that it’s just sitting there drinking up the delicious creamy goodness or baking in the oven. Leprechaun Rainbow Cupcakes

If you’ve seen any pictures of me, you know why I have to make special things for St. Patrick’s Day. Pale skin, green eyes and freckles freckles everywhere. I missed out on the red hair though (darn you genetics!). In actuality I think I’m about an eighth Irish, but it is the heritage I associate most with. I’d love to visit the Emerald Isle someday. Photos of the verdant (my super smart husband taught me that word) rolling hills of Ireland are more beautiful to me than all the sandy beaches and turquoise waters in the world. I know. I’m odd. Irish Soda Bread Cookies

Happy Saint Patrick’s Day everyone!! I love this holiday. It’s the day I’m proud to have pale skin, freckles and green eyes. Features of my Irish heritage. Go out there and chase a rainbow, trap a leprechaun, don’t forget to wear your green and have a beer for me! If you’re not Irish, pretend you are today…you’ll be glad you did. I made these cookies, reminiscent of the traditional Irish Soda Bread frequently served alongside corned beef and cabbage (which, I’m headed to my ma’s house to eat).
