This is not a “homemade” meal. I mean, I had to boil the water, but that’s about it.
Sometimes – I just am not feelin’ it when it comes to dinner time. Frequently that happens to fall on Friday night. Costco to the rescue. The other day I was there and stopped by one of their sample tables. Normally I do not eat the samples at Costco. I don’t know why, it just is gross to me. I know, there’s no reason I should feel that way, but I do. Anyway – I saw these two items paired together and it just seemed intriguing, so I stopped for a nibble.

Oh goodness was it good. I’ve had the ravioli before, usually I just drizzle it with some olive oil and a sprinkle of parmesan cheese and call it good. The butternut sauce was absolutely delicious with it though. Yum yum yum. And, it’s super light. The ingredients are: butternut squash, water, tomato paste, red bell pepper, evaporated cane juice, butter, celery, onion, garlic, seasoned salt, citric acid and black pepper. Seriously. All real ingredients, and only 100 calories in a serving. Boil up some water, cook the ravioli (about 3 minutes), swoosh it around with some sauce and bam – a totally brainless, but still delicious dinner.

Ravioli are wonderful.
