Honeyed Apple Peanut Butter Tart

Let’s face it. My kids have more access to treats and sweet delights than most little munchkins do. I’m always baking something and although my daughter (in general) has her father’s sweet tooth – or lack thereof – my son LOVES everything I make. He would eat baked goods all day every day if I let him. I love creating delicious food too much to really care about frequency of snacks, so I went in search of a healthier option for an after nap treat. This tart seemed perfect. Apples and peanut butter. Sweetened with a little honey. Oh yum! It comes together very quickly too, which makes it the perfect thing to throw in the oven after the kids head down for their afternoon snooze. Since their siesta is the only me time I have all day, I don’t want to spend all of it baking. At least not every day.

This tart has very few ingredients, and I almost always have all of them in my house!

First, you’re going to cut up that puff pastry along the folded lines – how easy is that? No measuring!

Then, peel and slice your apples thinly. I’m so not a fan of coring apples. Here’s my cheater speedy way.

Introduce a nice rounded scoop of peanut butter to Mr. Honey Bear.

Mix the two together and spread onto the pastry.

Layer your cut apples on top and drizzle with a little more honey.

And a smidge/sprinkle of sugar.

Bake. That’s all there is to it. Told you it was easy!

Golden and puffed, sweet peanut butter with tart apples. Absolutely delicious. Moderately healthy as well.

Honeyed Apple Peanut Butter Tart

(adapted from Picky Palate)

1 sheet Puff Pastry, thawed

heaping 1/2 Cup creamy peanut butter

2 Tablespoons honey, warmed plus 4 Tablespoons for drizzling

2 apples of choice, sliced thinly (I used Granny Smiths)

2 Tablespoons granulated sugar

1.  Preheat oven to 350 degrees F.  Slice puff pastry dough into 3 equal size rectangles and place onto a parchment paper lined baking sheet.  Warm peanut butter in a microwave safe bowl until liquid like.  Drizzle in 2 Tablespoons of honey, stir then spread evenly over 3 pastry rectangles leaving 1/2 inch border around edges.  Layer apple slices neatly over top of peanut butter, drizzle with warm honey, sprinkle with sugar then bake for 30-35 minutes or until pastry is lightly browned and puffed around the edges.  Let cool completely then drizzle with additional warm honey if desired and/or powdered sugar.  Serve as whole tarts or cut each tart into thirds.
