Mango Guacamole

The title says everything you need to know. Say it slowly with me. Mango. Guacamole. Feel the words as they bounce from your lips. Mango. Sweet, light, tropical. Guacamole. Rich, creamy, delicious. Now put them together. You know it’s going to be unbelievable.

And it is. No matter how much I tried, I could not stop gorging myself until it was gone. Gone. Gone. I knew I was filling up before dinner. I rationalized that it was all fruit and veggies…that I was being healthy to consume pretty much the full batch. Ha! Not even the promise of fresh fish tacos with a tequila lime avocado creme (more on that next time) could keep me from wolfing this guac down. It was just so simply delicious. You’ll understand when you make it. Which you should do right now. Stop reading. Go to the store. Make this.

Mango Guacamole

1 large mango, diced
2 medium tomatoes, diced
1/2 onion, finely diced
2 T fresh cilantro, chopped
1/2 lime
2 large avocados, chopped and slightly mashed
1/4 tsp garlic salt
salt n’ pepper to taste

Combine mango, tomatoes, onion and cilantro in a bowl. Squeeze lime juice over bowl and stir to combine.
Chop and mash avocado slightly then add to mango mixture. Season to taste with salt and pepper and garlic salt. Stir to combine. Serve with chips.
