It’s the last day of school in my area. Time for relaxing by the pool during the day, languid summer evenings, beach parties, bar-b-ques and camping trips. It occurred to me the other day that while I’ve shared many of my favorite drink recipes in the past few years, it might be nice to compile them all in one post. Fish Tacos with Tequila Lime Avocado Creme

I’ve tasted my fair share of fish tacos. It’s my favorite tropical vacation food. These are the best ever. The thing that puts them on a different level from all others? The absolutely gorgeous and delicious avocado creme. Light with a hint of tequila and lime, it is the perfect base for deliciously seasoned Mahi Mahi. Absolutely glorious.

Long Island Iced Tea

I’ve never really understood the concept of not mixing your liquor. I hear it all the time. It goes something like this. “Oh, I can’t have a Cosmo because I’ve been drinking Mai Tais all night. I don’t want to mix my drinks.” Tangent…I just realized my cosmopolitan recipe isn’t posted on this blog. Horrors! Must fix that soon! Back to the Long Island. It slaps you upside the head and says “Just throw it all in there!”. This bar staple has five different kinds of alcohol. Talk about mixing drinks! Pretty much the only thing it DOESN’T have is tea!

Perfect Margarita On The Rocks

There’s a tradition in my family. When someone is getting married, a certain uncle of mine brings the bar. In his Ford Explorer. I’ve enjoyed several “dry” weddings hanging out in the parking lot with him pouring various beverages to help the party be a little more festive. Actually, this uncle brought his mobile bar to my wedding. I was just a baby and not of drinking age, so there wasn’t alcohol provided. Nobody told me the bar was there. I found out few months later from my friends that they had a grand old-time with “some guy in an Explorer who had a full wet bar on the tailgate”. I made sure to check the parking lot at the next family wedding and lo-and-behold, found the party car.

Now, there are some drinks that will not work delivered from a parking lot bar. One of them is a blended margarita. I mean, how would that possibly happen right? But what flows beautifully is lime soaked tequila with hints of orange and brandy over ice. Mix up all the alcohol and put it in a sealed container. Then simply shake, squeeze a lime and pour over ice. I happen to know that bartending is totally doable in the backseat of a Camry too. So don’t worry if you drive something other than an SUV. If you have no excuse to bring a bar to a wedding, you can always make a batch of these for tailgating, a BBQ, poker night or just a Friday (or Tuesday). They are perfection. Enjoy!

Perfect Margarita On The Rocks

2 cups sweet and sour mix
1 cup triple sec
1 1/2 cups gold tequila
1/3 cup brandy-based orange liqueur (such as Grand Marnier®)
2 limes, quartered


  1. Salt the rims of 8 glasses. To do so, pour salt onto a small plate, rub the rims of the glasses with lime, and press them into the salt. Fill the glasses with ice.
  2. Combine sweet and sour mix, triple sec, tequila and Grand Marnier in a large pitcher. Stir or shake until smooth. Fill glasses with ice and squeeze a quarter lime into each glass, fill with margarita mixture and serve.
