Pear and Feta Salad

The dressing on this salad is out of this world. I wanted to eat it with a spoon. It is a little sweet and a little tangy and mixes perfectly with the richness of the feta and crisp sweetness of the pears. Fabulous!

I messed with the original recipe a bit because of family food issues, personal preferences and inability to find ingredients. The resulting salad was amazingly good. A perfect way to start off my dad’s special birthday dinner.

Pear and Feta Salad

1 (10 ounce) bag mixed field greens
1/2 sliced red onion (optional)
1 Bosc pear, cored and sliced
1/2 cup chopped candied pecans
1/2 cup crumbled feta cheese

1/4 cup honey
1/3 cup apple cider vinegar
1/2 cup mayonnaise
2 tablespoons packed brown sugar
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup olive oil

Directions

  1. Place the salad greens on your plate.  Top with the red onion, pear, pecans, and feta cheese.
  2. To make the dressing, place the honey, vinegar, mayonnaise, brown sugar, salt, and pepper in a food processor or blender, and blend thoroughly. With the motor running, slowly pour in the oil. Blend until mixture becomes creamy, about 1 minute. Pour over salad mixture.  Serve immediately.
