In the summer, there are lots of opportunities to bring salads and slaws to BBQs. I recently brought a sweet & sour apple slaw (light & delicious) and of course there’s always my standby Chinese chicken salad (perfection!) if I’m not sure what to bring. Last weekend I wanted to make something close to a traditional cole slaw, but with a little twist. I dunno why, it has been forever since I had just a cole slaw. I needed that kind of dressing. This is what I came up with. Crunchy apples with moist tender chicken and a killer slaw sauce with a kick from lemon juice and cider vinegar.
You could use this dressing on just a bag of cole slaw mix if you’d like, but I really think the chicken and apple is what makes this salad stand out from the crowd. Also, if you leave out the apples, you may want to kick up the sugar just a tad.
The best part about this slaw is that the ingredients for the dressing are all things you probably have in your pantry/fridge. Which makes it PERFECT for last-minute invites when you aren’t sure what to bring! Enjoy!
Summer Slaw

1/2 cup mayonnaise
2 1/2 tablespoons granulated sugar
1/4 cup milk
2 1/2 tablespoons lemon juice
1 1/2 tablespoons cider vinegar
salt and pepper to taste
1 large apple, cut into chunks
1 1/2 cups chopped cooked chicken (I used part of a rotisserie chicken)
1 bag shredded coleslaw mix or 1 head of cabbage, shredded
Combine first 6 ingredients for the sauce. Pour over the cabbage, chicken and apple chunks and stir to coat. Refrigerate until ready to serve.
It sounds really good, but I hate using mayonnaise… Is there anything I could substitute for the mayo and still have it taste like yours? Thanks!
