Italian Cucumber Crostinis

I first enjoyed these little appetizers at my cousin Shannon’s house. Crostinis are perfect for a tea time delight because they fit neatly on a small plate and require no utensils. These are quick and delicious. Certainly not your mother’s cucumber tea sandwich. I mixed the cream cheese and seasoning packet together and let it sit in the fridge overnight to really blend the flavors. Anytime I’m mixing two things together, I like them to have a chance to get to know each other. The fridge is totally a food night club.

Italian Cucumber Crostinis

1 8oz block of cream cheese, softened
1 Italian dressing seasoning packet
1 seedless English cucumber
1 french baguette
Dill for topping (fresh or dried)

DIRECTIONS:
Cut the baguette into slices about 1/2 an inch thick.  Mix the cream cheese and Italian seasoning and spread over each piece of bread.  Top with a thin slice of cucumber, and garnish with the dill.  Serve!

    1. Mmmmm. Me too. Actually, every time I look at the photo, I want to make some more. Maybe I will today and take them to my “ladies worship night” this evening.
